Popcorn Recipes and TV Shows

Hello, hello!  The first few days of 2021 are off to a slow start.  Perhaps it’s due to still being locked down or perhaps it’s due to it being freezing in Chicago.  Either way I’m enjoying the slower pace and soaking it in.  I’m also loving the non stressful nights because I don’t need to get up and go to an office in the morning.  Working from home does have its benefits.

 

Every night is kind of like a weekend night.  With the stress free nights we have been indulging in more movies and binge watching TV shows.  I used to be a strict 10pm bedtime gal, but now I’ll stretch it to finish a movie or a TV show. I’m also making a lot more popcorn at night, which is my favorite snack.  And I don’t just eat popcorn, I am creating custom toppings to go with my popcorn and they are delicious.  Today I’m sharing my three favorite popcorn recipes for you to enjoy.

 

Popcorn Recipes

The most important thing when making any of these popcorn recipes is to not take any shortcuts.  So you have to pop the popcorn, no microwavable bags of popcorn or pre-popped corn.  I pop my kernels in a bowl in the microwave, I actually use this bowl

And when melting butter, melt it on the stove, do not microwave it.  Melted butter tastes better when it melts slowly on the stovetop, over a flame.  It sounds crazy and I know this, but you have to trust me on it.  Now onto the recipes! 

 

Parmesan Popcorn

This is my signature recipe that I’ve been having since I was a kid.  So it’s technically a family recipe and it is so good.  The ingredients are simple and the flavor is amazing.  

  • Popcorn Kernels
  • Salted Butter (half a stick to a stick, depending on amount of popcorn)
  • Grated Parmesan Cheese
  • Fine Salt 

Pop the popcorn in the microwave and melt the butter on the stove top.  Use as little or as much butter as you like.  I personally use half a stick for two healthy bowls of popcorn (one for me and Mike).  Put the freshly popped popcorn in a large bowl, sprinkle it with the fine salt and parmesan cheese.  Next spoon the butter over top of the popcorn in a circular motion.  Shake up the bowl to gently mix it up and then repeat all the steps.  Eat immediately! 

 

Seasoned Popcorn

For this recipe you will need the following:

  • Popcorn Kernels
  • Salted Butter (half a stick to a stick, depending on amount of popcorn)
  • Lawry’s Seasoned Salt

You also know the drill…but pop the popcorn in the microwave and melt the butter on the stove.  Use as little or as much butter as you like. Put the freshly popped popcorn in a bowl and drizzle on the melted butter.  Next, lightly sprinkle the seasoned salt on top.  Shake up the bowl and repeat if necessary.  Be careful not to use too much seasoning salt, so taste testing is a must with this recipe.

 

Rosemary Popcorn

The most complex popcorn recipe of the three, but only because you are popping it on the stovetop.  You will need the following ingredients:

  • Popcorn Kernels
  • ¼ Cup Olive Oil
  • ¼ Cup Canola Oil
  • Sea Salt
  • ½ tsp Garlic (minced or fresh cloves mashed up)
  • 10 Sprigs Fresh Rosemary

Place the 3 popcorn kernels (only 3), canola oil, garlic and 6 sprigs of fresh rosemary in a pot (medium sized and a little deeper)  and heat on medium-high.  Once the three kernels pop your pot is ready for the rest of the kernels.  Put them in the pot and let them fill up the pot.  You may need to empty the popped kernels to allow room for the rest to pop.  

Once done, add the popcorn to a large bowl or bag.  Drizzle the olive oil over it, sprinkle with the sea salt and mix in the remaining 4 sprigs of rosemary.  Enjoy a little and save some for later.  Place the remaining amount in a large ziplock bag to enjoy the next day.  Letting it sit overnight allows the flavors to soak in and well,  it’s delicious!
