Easy Lunch Salad

Hello Friends!  How many of you hate making your lunches?  I sure do. Whether I’m at work or at home coming up with lunch ideas is twice as painful as coming up with dinner ideas.  Dinner is a must have, while lunch is usually an afterthought. Every week I create a dinner menu, but never a lunch menu.

 

I found that my lunch habits were horrible and I needed a change ASAP.  I would eat anything from crackers and cheese to a box of Wheat Thins.  While I love Wheat Thins, they are not actually healthy even though they have the name wheat in them 🙂  Focusing on healthier options was something I needed to do.

 

I turned to salads because I do love them.  It must come with age, because I now crave a good salad with delicious ingredients. I can look at salad pictures all day on Pinterest ,but they usually don’t turn out as beautiful.  Mine are more like Pinterest fails.

 

My Roasted Chickpea Wedge Salad came out perfectly though.  I ended up combining a few recipes I had to develop this new easy lunch salad.  To save even more time, I’ve cut a few corners like using store bought salad dressing instead of making it myself.  I also use precooked bacon to save time too, but the salad is more delicious if fresh cooked bacon is used.  

 

What I love about this easy lunch salad is it includes ingredients that I normally have in the house.  I also love how quick it is to make. The actual salad takes 5 minutes to make, but the roasted chickpeas take about 30 minutes to bake in advance.  To speed things up I make the roasted chickpeas in the morning and then they are ready for my lunch later in the day.  They are also a great snack to have mid-morning.

 

I can honestly say that this easy lunch salad makes me happy when I eat it.  It’s like I’m in a restaurant, even though I’m wearing leggings in my house eating lunch!

Roasted Chickpea Wedge Salad

A classic restaurant-style wedge salad with roasted chickpeas

Ingredients
  

  • 1 head iceberg lettuce
  • 3 slices bacon, cooked
  • 1 slice creamy blue cheese
  • 1 tbsp blue cheese dressing
  • 1 can roasted chickpeas see roasted chickpea recipe

Instructions
 

  • Slice lettuce into quarters
  • Cook bacon to your liking, crispy or fatty
  • Crumble blue cheese
  • Combine all ingredients on plate and drizzle with dressing

Roasted Chickpeas

Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 1-2 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika

Instructions
 

  • Heat oven to 425 degrees
  • Dry off chickpeas with a paper towel and remove loose skins
  • Toss chickpeas and all ingredients together
  • Place on a baking sheet
  • Bake for 15 minutes, toss and flip then bake for another 15 minutes
