Easy Weeknight Meals – Cornflake Chicken Fingers

Hello, hello!  One of my most requested posts recently has been for easy weeknight meals.  If you are following me on Instagram you know that I’m always sharing what I am cooking in my stories.  The majority of the time they are quick and easy meals.  I’m a working mom who wants to come home and spend time with my family so easy and quick is a meal requirement.

Today I’m sharing one of my favorite meals to dress up chicken.  I’m a red meat eater, but have been trying to like chicken…it’s hard.  It’s easier for me to like chicken when it’s dressed up a bit.  Either with a marinade or covered in something like cheese 🙂  My go to chicken dish is Cornflake Chicken Fingers.  They take less than 10 minutes to prep and about 25 minutes to bake.  After you do it a couple times the prep time gets even quicker.  Keep reading to see the full recipe.

My main side with the Cornflake Chicken Fingers is mashed potatoes.  I know that mashed potatoes don’t sound easy or quick, but I have a secret.  I use Lizzie’s Baby Brezza Glass One Step Food Maker (you can read my full post about it here).  Sounds wild, but it’s so easy to use and there isn’t a huge mess.  Lizzie is done with baby food and I like the appliance so I found a new use for it.

Cornflake Chicken Fingers

Ingredients
  

  • 2-1/2 cups cornflakes (crushed)
  • 1/2 cup flour
  • 1 lb chicken breasts, boneless and skinless
  • 2 eggs
  • 1/2 tsp salt
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper

Instructions
 

  • Preheat oven to 400 degrees
  • Place flour in a bowl
  • Place eggs (beaten) in a bowl
  • Place crushed cornflakes, garlic, paprika and cayenne pepper in a bowl
  • Place each piece of chicken in the flour, then eggs and roll into cornflake mixture
  • Place each piece of chicken on a baking sheet, cook for 20 minutes or until golden
  • Add dipping sauce of your choice, such as ranch, bbq or honey dijion
