3 Work From Home Lunch Salads

Working from home has its perks for sure. My favorite one is a refrigerator filled with fresh ingredients. I love having the ability to make my lunch in my own kitchen vs. eating out of a container at my desk. Don’t get me wrong, that can be fun too, but I love eating at home. My go-to for working from home lunches are salads.

I feel lighter when I eat salads and more energized. Making salads at home for lunch is quick and easy when I plan ahead and stock up on the ingredients I need. I plan a weekly menu for dinners, but I usually just wing it for lunch. Which is why I love these salads. I usually have all the ingredients in the house and they are quick and easy to make. Furthermore, they are also delicious and keep me full all afternoon.

 

Lunch Salads 

Tomato and Avocado Salad

The title really gives away the main ingredients, but I jazz it up a bit.  No measurements, everything is to taste and depends on how hungry you. Here is what you need:

  • Tomato
  • Avocado
  • Shaved Parmesan
  • Sea Salt
  • Fresh Ground Pepper
  • Olive Oil

 

Summer Chicken Salad

This salad is perfect for dinner too. In addition, it’s a big crowd pleaser with guests. It’s simple, yet they will think you slaved over it.  Here is what you need:

  • Romaine Lettuce (go light on the lettuce, just a handful)
  • Corn (you can grill up corn on a cob or use canned corn warmed up)
  • Avocado
  • Shaved Parmesan
  • Grilled Chicken marinated in the salad dressing for at least 15 minutes
  • Salad Dressing (whisk everything together)
    • 4 tablespoons olive oil
    • ¼ cup fresh lemon juice
    • 2 tablespoons chopped fresh rosemary
    • 4 cloves garlic, finely chopped
    • kosher salt and black pepper

 

Roasted Chickpea Wedge Salad

This one takes a little bit more time since you need to roast the chickpeas so plan ahead. Here is what you need for this salad:

  • 1 head iceberg lettuce
  • 3 slices bacon, cooked
  • 1 slice creamy blue cheese
  • 1 tbsp blue cheese dressing
