Roasted Sausage and Veggies

Ingredients
  

  • 1 LB Kielbasa (or any linked sausage)
  • 1 Green Pepper
  • 1 Onion
  • 1 container Mushrooms
  • 1 Zucchini
  • 2 tbsp Olive Oil
  • 1 tbsp Balsamic Vinegar
  • 1 tbsp Basil (fresh or dried)

Method
 

  1. Pre-heat oven to 425 degrees
  2. Slice sausage into 1/4 inch chunks
  3. Slice all veggies
  4. Lightly cover all ingredients in olive oil and balsamic vinegar
  5. Sprinkle in basil and salt and pepper to taste
  6. Spread onto a baking sheet
  7. Bake for 25 minutes or until roasted
