Homemade Frites

Prep Time 15 minutes
Cook Time 50 minutes

Ingredients
  

  • 2 tablespoons seasoned salt
  • 1 teaspoon chili powder
  • 1 teaspoon basil (fresh or dried)
  • 1/8 teaspoon cumin
  • 1/8 teaspoon black pepper
  • 4 medium russet potatoes
  • 2 or more tablespoons parmesan cheese
  • 1-2 tablespoons olive oil

Instructions
 

  • Combine all the seasoning in a bowl and set aside.
  • Wash and peel the potatoes., then slice the potatoes into thin slices about 1/4 inch wide.
  • Place the cut potatoes in a large bowl and cover them with water. Soak the potatoes for at least 30 minutes. You can soak them overnight if needed. Place in the fridge if soaking for more than an hour.
  • After the fries have soaked remove them from the water and dry them off. Make sure you remove the excess water from the potatoes. Use a towel to absorb the water.
  • Add the dried potatoes in a bowl, add 1-2 tablespoons of olive oil and half of the seasoning, mix so all potatoes are coated. The seasoning is a little spicy so use as little or as much as you want. Be sure to keep some for later though.
  • Spray a cookie sheet with non-stick spray. Lay out the potatoes on the cookie sheet. Do not overlap the potatoes, they must all be flat to cook.
  • Cook for 30 minutes at 400 degrees while flipping the potatoes over after 15 minutes.
  • Increase the oven to 425 degrees and cook for another 20-25 minutes.
  • Remove the frites once the ends are lightly brown and crispy. Add additional seasoning if desired and sprinkle with parmesan cheese.
